Kale, a Superfood?
A kale plant has green or purple leaves and the central leaves do not form a head like a cabbage.
Overall, however, the taste of kale can be surprisingly varied, from bitter or peppery to more plain and slightly sweet.
It is hardy and thrives in wintertime, and can survive in temperatures as low as -15 degrees. Kale can become sweeter after a heavy frost.
Texture: Firm and crisp leaves
Flavor: Mildly bitter, slightly sweet
Suggested Preparations: Raw, steaming, braised
Boiling raw kale diminishes most of these nutrients except for vitamin K

Kale is a concentrated source of antioxidants and anti-inflammatory nutrients.
Raw kale is composed of 84% water, 9% carbohydrates, 4% protein, and 1% fat. In a 100 gram serving, raw kale provides 49 calories and is a rich source of vitamin A, vitamin C, vitamin B6, folate, and manganese. Kale is a good source of thiamin, riboflavin, pantothenic acid, vitamin E and several dietary minerals, including iron, calcium, potassium, and phosphorus
