A fresh start to a New Year!

The flavors of winter are usually hearty, a bit heavy, a blend of savory meats, cheeses, and breads. However, once the New Year strikes, our appetites strive for healthier & fresher options. Of course summer offers an abundance of delicious fruits and vegetables but winter also has a lot of options that appeal to any palate.

Satisfying Soups…..Soups are great way to satisfy your appetite while incorporating healthy seafood, chicken or turkey, and winter vegetables. Lloyd’s Chicago offers daily soup specials that are scratch made with the freshest ingredients. French onion, cream of broccoli, Spanish chicken with rice, and tomato blue cheese are just a few of the special soups you might choose from when dining at Lloyd’s, located in Chicago’s Financial District.

Savory Salads…..Need something to spark your taste buds, try our salt roasted beet salad. Beets are chockfull of healthy vitamins and minerals. The beets are slow roasted and begin to caramelize from their natural sugars. Baby arugula is lightly dressed with balsamic vinaigrette. This is when the dish finally comes together! The beets are gently laid on top of the dressed arugula, and then topped with whipped goat cheese and crushed pistachios. The crunchiness of the pistachios and beets paired with the smooth goat cheese and peppery arugula will spark a flavor explosion on your taste buds.

Seasonal Veggies & Fruits……..Avocado is a great year round fruit that is available at Lloyd’s Chicago in a variety of dishes. Fresh Seafood Cobb salad is great healthy choice for the New Year. Seared bay shrimp and scallops, special crab, tomatoes, corn & black bean relish, avocado, hard boiled eggs, bell peppers, blue cheese crumbles on a bed of chopped romaine and iceberg lettuce and served with Lemon dill dressing is the perfect balance of protein, seasonal veggies, and ocean fresh seafood.

¼ cup of Dill (fresh and finely chopped)

1 Anchovy fillet

½ cup Lemon juice (freshly squeezed)

½ cup Buttermilk

2 tsps of Fresh Garlic (minced)

Dash of Black pepper

Dash of Worsteshire sauce

Dash of Tabasco

2 cups Heavy Mayonnaise

Puree together anchovy, lemon juice, garlic, Worsteshire, Tabasco, pepper. Whisk Mayo and buttermilk together. Add anchovy mixture and dill to mayo and combine. Chill until served.
