Here are a few summer inspired dishes at Lloyd’s Chicago!

  1. Grilled Atlantic Salmon with brown sugar mustard glaze; served with a quinoa salad with Italian vinaigrette. This herbaceous dish is a featured Lifestart approved menu item this summer. A healthy balance of sweet and sour highlighted by a hint of acidity from the vinaigrette.

Second most popular fish in the U.S., salmon has a savory, earthy, and slightly sweet flavor and is enriched with omega 3 fats, high quality protein, minerals, and vitamins.

Farmed Atlantic salmon has a milder flavor than wild salmon. The colors of Atlantic salmon range from light pink to orange and have a medium-firm texture.

Looking to pair it with a Cocktail? Try a glass of rye whiskey. The black pepper, cinnamon, and ginger flavors of the whiskey highlight the earthy and herbal notes of the grilled salmon
  1. Enchiladas with Mole sauce, Monterey jack cheese, queso fresco. Served with lettuce, tomato, sour cream, guacamole, Spanish rice.

Something about the summer inspires dishes filled with spice. At Lloyd’s Chicago, we change up our enchilada prep from time to time.  One prep includes plantains which are closely related to bananas.  Plantains are treated as a vegetable in the kitchen. It is a staple for many countries in Asia, Central & South America, Africa, and Oceania.

The taller and larger relative to the banana, plantains grow well in tropical weather. The flesh of a plantain is rich in starch and sweetens as it ripens. Plantains are a source of energy and starch as well as fiber.

Look for firm, deep green and heavy handed plantains. Once they ripen, they are very delicate and need to be used quickly. Plantains are delicious fried and have a similar texture to potatoes. Best served with rice, eggs, beans, fish, poultry, and savory sauces.  You may also see chicken or pork enchiladas, but who knows what the chef will think up next!

Looking to pair it with a Cocktail? How about a Caipirinha!   Made with brown sugar, lime juice, and cachaca liquor, which is similar to rum-the caipirinha matches the rich and sweet flavors of the plantain enchiladas with a twist of sweet & sour.

  1. Chicken & Waffles with Maple chipotle butter, bbq sauce, crystalized sugar waffle

When you search for favorite 4th of July dishes or summer picnic food ideas, the infamous fried chicken shows up. The juicy crispy saltiness of the chicken paired with the toasted buttered sweet waffles make for the treat during the summer. Whether you are sipping on a cool cocktail at the bar or heading to a picnic in the summer heat-Chicken & Waffles hits the spot.

At Lloyd’s, we lightly flour dust chicken breast tenders and flash fry them. As the juices settle into the chicken, we prepare a Belgian waffle coated with crystalized sugar. Finally, the pair are plated and topped with a maple chipotle butter & barbecue sauce for your dipping pleasure. You can enjoy it in the bar or as an appetizer in the dining room.

Looking to pair it with a Cocktail? The Moscow mule-vodka, ginger beer, lime juice-adds a spicy layer to the chicken & waffles. Cool and refreshing- it won’t be hard to enjoy during the hot summer weather.
