- Grilled Atlantic Salmon with brown sugar mustard glaze; served with a quinoa salad with Italian vinaigrette. This herbaceous dish is a featured Lifestart approved menu item this summer. A healthy balance of sweet and sour highlighted by a hint of acidity from the vinaigrette.

Farmed Atlantic salmon has a milder flavor than wild salmon. The colors of Atlantic salmon range from light pink to orange and have a medium-firm texture.

Plantains are treated as a vegetable in the kitchen. It is a staple for many countries in Asia, Central & South America, Africa, and Oceania.
The taller and larger relative to the banana, plantains grow well in tropical weather. The flesh of a plantain is rich in starch and sweetens as it ripens. Plantains are a source of energy and starch as well as fiber.
Look for firm, deep green and heavy handed plantains. Once they ripen, they are very delicate and need to be used quickly. Plantains are delicious fried and have a similar texture to potatoes. Best served with rice, eggs, beans, fish, poultry, and savory sauces. You may also see chicken or pork enchiladas, but who knows what the chef will think up next!
